Chocolate Almond Macaroons Recipe

While many chocolate treats are best served during cooler weather, there are those that are perfect for the spring and summer as well. Chocolate almond macaroons are perfect anytime of the year. These are great for any event, and work well at picnics as well.

Ingredients:

Almonds – ¾ cup – blanched
Whites from 2 large eggs
Cream of Tartar – 1/8 tsp
Powdered sugar (confectioners sugar) – 1 ¼ cup
Unsweetened cocoa powder – 2 ½ tbsp
Almond extract – ¼ tsp

Directions:

  • Using a blender or food processor, blend about ½ cup of the almonds, until they are ground. Chop the remaining almonds. Set all almonds aside.
  • Combine the egg whites, the powdered sugar, the cream of tartar, and the cocoa and beat until the mixture is thick and well mixed.
  • Stir all of the almonds into this mixture.
  • Spray a cookie sheet with cooking spray. Dust with a bit of flour.
  • One spoon at a time, drop the mixture onto the cookie sheet, just as you would for cookies. Make sure that each spoonful is 2 inches apart.
  • Bake for 10 minutes in a 375 degree oven. Cool. Store in an airtight container.
