Chocolate Mousse Recipe

Anybody who works with chocolate absolutely must be able to make a time-honored favorite – chocolate mousse! Here’s how.

Ingredients:

5 separated eggs
¾ cup sugar
4 additional tbsp of sugar
3 tbsp orange liqueur
Semi-sweet chocolate – 8 ounces
3 tbsp of coffee (percolated)
8 ounces of butter – unsalted
Pinch of salt
¼ cup of chopped candied orange peel
2 cups of whipping cream

Directions:

  • In a large mixing bowl, combine the egg yolks and ¾ cup of sugar. Beat until the mixture is a thick, pale yellow. Add the orange liqueur, and beat a little more until the liqueur is mixed in well.
  • Set this bowl over a pan of warm water and beat for about four more minutes. The mixture should start foaming a bit, and should be warm. Remove the bowl from the warm water bowl and place the same bowl over a pan of cool water, and continue beating until the mixture has cooled.
  • Combine the chocolate and coffee in a double boiler with hot water. Allow the chocolate to melt. Remove from heat. Combine the butter with this mixture, and beat until it is smooth and creamy.
  • Combine the chocolate mixture with the egg yolk mixture. Add the orange peel and mix until smooth.
  • In a separate bowl, combine the egg whites and the salt. Beat and then add the 4 tablespoons of sugar. Beat until stiff. This should look like a meringue when you are finished beating it.
  • Slowly combine the egg white mixture with the chocolate mixture. Stir until well mixed.
  • This mixture can then be poured into individual desert cups or a serving dish. It should be refrigerated for approximately two hours before serving, and should be served with the whipping cream.
