Chocolate Truffles Recipe

Chocolate Truffles are great for numerous occasions. They are wonderful treats for Christmas parties, Thanksgiving deserts, anniversaries, or just an afternoon spent with friends. Truffles are quite elegant – yet very easy to make. As with most chocolate, these taste wonderful with liquor, and are especially great served with red wine.

Ingredients:

Semi-sweet chocolate - ½ pound
Whipped cream - ¼ cup
Coffee - 1tsp
Cocoa powder

Directions:

  • Using a double boiler, melt the chocolate.
  • In a heavy saucepan, heat the whipped cream until it is just warm. Mix in the coffee and stir. The coffee should be already percolated – do not use coffee grounds! Remove from heat.
  • Pour the coffee/whipped cream mixture over the melted chocolate. Stir the ingredients together well. This mixture should start to thicken a bit.
  • Refrigerate the mixture for about twenty minutes.
  • Form truffle balls from the mixture, and roll the balls in the cocoa powder.
  • Cover a pan with waxed paper, and lay the truffles on this. Refrigerate the truffles until a few hours before they will be served. Serve the truffles at room temperature.
  • Store left-over truffles in the refrigerator.
